Norwegian Cruise Line - Caribbean

From Miami to Harvest Caye, Belize, Roatán, Honduras, and Grand Cayman onboard Encore

Daniel Porter on 29 Nov 2025

On my recent Western Caribbean fam trip with Norwegian Encore, I went from curious to completely hooked. I expected a straightforward way to visit Miami, Harvest Caye, Roatán and Grand Cayman, but discovered a ship that feels like a destination in her own right, with a multi-level go-kart track hanging over the side, waterslides, VR experiences and excellent dining in both included and speciality venues. Add in warm, relaxed service and the extra value of NCL’s Free at Sea perks, and I came home confident recommending Norwegian Encore to families, couples and groups alike – and impressed enough to purchase future cruise credit for my own holiday.

Norwegian Encore: Why This Western Caribbean Cruise Turned Me From Curious To Completely Hooked

As a Travel Counsellor, I went on my recent fam trip with Norwegian Cruise Line’s Encore expecting to learn more about the product, tick off a few ports, and get a feel for life on board. I came home genuinely hooked, future cruise credit in hand, and a completely refreshed view of what a cruise holiday can be for my clients.

This was not just a way to get from A to B. Norwegian Encore proved herself to be a true destination in her own right.

A Fresh Take On Caribbean Cruising

The itinerary itself was a relaxed, modern take on the Western Caribbean, with a lovely balance of beach, culture and soft adventure:

  • Starting in Miami
  • Harvest Caye, Belize
  • Roatán, Honduras
  • Grand Cayman

You wake up to a new view most days, yet enjoy the ease of unpacking just once and having everything you need within a few steps. The ports offered:

  • Beach time: classic Caribbean sands and turquoise water
  • Culture & nature: a feel for local life, wildlife and landscapes
  • Adventure: plenty of opportunities for clients to add on snorkelling, zip-lining, water-based fun or exploration on quad bikes

The mix of port days and sea days was particularly well judged. It meant I could properly experience key onboard features like the go-karts, waterslides, dining and entertainment, but also see how smoothly the operation ran on busy port days. For selling purposes, it gave me a clear sense of how clients might realistically use their time on a week-long Western Caribbean sailing.

A Ship That Is A Destination In Its Own Right

What surprised me most about Norwegian Encore was just how innovative and activity-focused the ship is, especially on the top decks.

I went on board expecting great food and entertainment. What I had not fully appreciated beforehand was the sheer variety of experiences, including:

  • full multi-level go-kart track that hangs over the edge of the ship
  • Waterslides that twist out over the side, ideal for thrill-seekers and families
  • VR and immersive experiences, adding another fun, techy dimension for teens and adults
  • Indoor and outdoor spaces tailored to every mood: lively, sociable, chilled or quietly tucked away

Seeing all of this in person genuinely changed my mindset. Norwegian Encore is not just a floating hotel or a way to reach the islands: she is somewhere clients could happily spend the whole day, even if they did not get off in port. For families, couples and groups who want plenty to do, this is a very powerful message.

Food, Service & Onboard Atmosphere

One of the strengths of Encore is how consistently good the overall onboard experience felt, right across the ship.

Dining: Choice & Quality

The food was excellent throughout, with:

  • Included venues serving a consistently high standard, so clients do not have to rely on speciality dining to eat well
  • Speciality restaurants adding that extra “date night” or celebration factor, ideal for anniversaries, honeymoons or just a treat night during the cruise
  • Plenty of variety, so it is easy to keep things interesting over the course of a longer sailing

For clients who worry that cruise dining might feel repetitive or old-fashioned, Encore offers a much more contemporary, flexible feel.

Service: Friendly, Attentive, Relaxed

Service on board was truly first class:

  • Staff were friendly and approachable, but never intrusive
  • Interactions were efficient without feeling rushed
  • There was a relaxed, welcoming atmosphere that made it very easy to feel at home quickly

That combination of polished yet informal service really suits modern British clients who like quality but do not necessarily want traditional formality on holiday.

What really impressed me was how much is included to make life easy. With NCL’s Free at Sea offer, clients can choose added-value perks like a drinks package (covering a wide selection of spirits, wines, beers and soft drinks up to a set value per drink), plus other benefits such as speciality dining, Wi-Fi or shore excursion credit, depending on the promotion at the time. It is a brilliant way to upgrade the holiday feel and keep bar bills predictable.

Who Norwegian Encore Is Perfect For

One of my key takeaways from this fam is just how broad Encore’s appeal is. There genuinely is something for almost everyone, which gives me great confidence in recommending her to a wide range of clients:

  • Families:
    • Go-karts, waterslides, VR and family-friendly entertainment
    • Loads of casual dining options and relaxed venues
  • Couples:
    • Speciality dining, bars and lounges for quieter evenings
    • Spa time, adults-only spaces and romantic sunset views from deck
  • Groups of friends:
    • Activity-rich sea days with things to do together
    • A good variety of bars, entertainment and late-night venues

Importantly, the ship never felt like it was pitched at only one demographic. Whether you want full-on activity or a quieter, more indulgent experience, you can find your own style of holiday within the same sailing.

A Considered Itinerary That Showcases The Product

From a professional point of view, the itinerary did exactly what a good fam should do: it let me experience the heart of the product in a relatively short time.

  • I saw how embarkation ran in Miami and how smoothly port days were handled.
  • I experienced the headline features on sea days: go-karts, dining, entertainment and the general flow of life on board.
  • I had enough time in each port to get a proper “taster” of Harvest Caye, Roatán and Grand Cayman, and start thinking about what sort of shore experiences would best match different client types.

It felt like a very deliberate, well-crafted programme designed to showcase Norwegian Encore and the Western Caribbean route at their best.

Why I Am Confident Recommending NCL Encore To My Clients

The biggest testament to how impressed I was is that I purchased future cruise credit on board so I can book my own cruise in the near future. As a Travel Counsellor, I see a huge range of products, and I do not invest my own money lightly.

This trip left me:

  • Fully convinced of Norwegian Encore’s quality and consistency
  • Confident that I can match her to a wide range of clients
  • Excited to talk about her as a fun, modern, activity-rich way to see the Caribbean

For clients considering a Western Caribbean cruise, or those who have perhaps dismissed cruising as too traditional or limited, Norwegian Encore offers something genuinely fresh:

A relaxed, contemporary Caribbean holiday where you unpack once, wake up to a new view most days, and enjoy a ship that is every bit as exciting as the destinations you visit.

The Unexpected Highlight: Racing Go-Karts At Sea

The standout moment of my trip, without question, was the multi-level go-kart track right at the top of the ship.

Racing around the circuit as the sun went down over the Caribbean, then again after dark when both the track and ship were lit up, was incredible. You get this exhilarating mix of:

  • Sea breeze rushing past as you accelerate down the straights
  • Wide-open ocean and skyline views all around you
  • The thrill of proper corners and overtakes, high above the deck

The fact that the track actually hangs over the side of the ship adds an extra layer of excitement. It is unlike anything you can experience on land, and it perfectly sums up how Norwegian Cruise Line builds in unique, fun features that genuinely transform sea days.
