Miami & Western Caribbean with NCL Encore
Sunset balconies, Caribbean ports and a cruise that surprised me in all the best ways
I’ve never really described myself as a “cruise person”, so heading off on this Western Caribbean sailing with Norwegian Encore came with a fairly open mind and no big expectations. What I didn’t expect was just how much I’d enjoy it and how quickly my opinion would change once I was actually on board. From a vibrant night in South Beach, Miami, to relaxed sea days, brilliant dining and waking up somewhere new without the constant packing and unpacking, this trip showed me cruising in a completely different light. By the time I was standing on my balcony watching the Caribbean sunset, I realised this style of travel offers far more flexibility, comfort and enjoyment than I’d ever given it credit for.'
A Stylish Start in South Beach, Miami
Our journey began with a direct flight from London Heathrow to Miami with Virgin Atlantic, arriving into that warm Florida air that instantly tells you you’re on holiday.
We spent one night pre‑cruise at The Tony Hotel South Beach, right in the heart of the action. Its location could not have been better for a short stay: step outside and you’re straight into that iconic South Beach scene:
Powder‑white sand and a boardwalk perfect for a pre‑dinner stroll
Pastel Art Deco buildings and those classic “Miami Vice” style cars cruising past
Endless people‑watching and, if you’re lucky, a bit of low‑key star spotting too
With just one night, we made the most of it: a bit of shopping, some seriously tasty food, soaking up the atmosphere and that very particular Miami energy. For clients flying in ahead of a cruise, this kind of stopover is ideal: it shakes off the jet lag and adds an extra layer of holiday before you even step on the ship.
All Aboard: Life on NCL Encore
The next day, we boarded Norwegian Encore and settled into our balcony cabin. Having your own private outside space makes such a difference: morning coffee with sea views, watching the ship sail away from each port, a quiet moment in the evenings with the ocean as your backdrop.

Norwegian Cruise Line is known for its “freestyle” approach, and Encore really lives up to that: no strict dress codes, no fixed dining times, just lots of choice and a relaxed, easy-going feel. It is perfect for:
- Families with different ages and interests
- Multi‑generational groups who want plenty to do
- Couples and friends who like a fun, laidback atmosphere rather than formality
Dining Highlights
We tried several of the speciality venues, and they were a real highlight:
Cagney’s Steakhouse: classic, indulgent and ideal for a special evening.
Onda by Scarpetta: refined Italian, beautifully presented and full of flavour.
Teppanyaki: dinner and a show in one, with chefs cooking theatrically right in front of you. Great fun for families or groups.
The Local Bar & Grill: our late‑night go‑to, perfect for relaxed bites and drinks when you are not quite ready for bed.
There are plenty of other options too, from casual to more refined, so even fussy eaters or big family groups will be well looked after.
Entertainment & Nightlife
One of the standout experiences was the show “The Choir Man”. It was a bit different from the usual big cruise productions, but in the best way: engaging, surprising and very well put together.
Later in the evenings, The Local became a bit of a favourite spot, with a relaxed bar vibe that suited those nights when you just want to unwind and chat without anything too formal.
A Little Luxury: Spa & Relaxation
On the Thursday evening, I experienced the spa’s Ladies’ Night, which gives access to the hydrotherapy pools, steam rooms, saunas, salt rooms and even a snow room.
It felt wonderfully indulgent, and is a brilliant option if you or your clients enjoy a bit of wellness on holiday:
- Hydrotherapy pools to soothe tired muscles
- Heat experiences for deep relaxation
- The novelty of stepping into a snow room mid‑cruise!
For couples or friends travelling together, I would absolutely recommend adding a spa session to your plans, especially on a sea day.
Western Caribbean Highlights
The itinerary really showcased the variety of the Western Caribbean, with a blend of wildlife, beaches and easy days in port.
Cayman Islands: Stingrays & Seven Mile Beach
In the Cayman Islands, we joined the Stingray City & Seven Mile Beach excursion:
- Getting into the clear, shallow water with the stingrays was both thrilling and surprisingly serene.
- Seven Mile Beach lived up to its reputation, with its soft sand and turquoise water.
For families with older children, couples or anyone who loves marine life, this is a genuine “wow” experience, and one I would recommend pre‑booking as it is understandably popular.
Harvest Caye: Howler Monkeys & Beach Time
At Harvest Caye we chose the Howler Monkey experience, and it was unforgettable:
Hearing them before you see them, their calls echoing through the trees
Watching them in their natural environment, and realising just how loud they are
After the excursion, there was time to enjoy the island itself:
- No tender was needed, which made getting on and off the ship really easy
- Lots of activities on hand, plus shopping and a lovely beach for those who simply want to relax
- Ziplining across the island, which is fantastic for adrenaline seekers and for anyone who likes to watch their loved ones flying above them while they keep both feet on the ground!
Harvest Caye genuinely has something for everyone, which is why I think it works so well for multi‑generational families and mixed‑interest groups.

Roatán: A Laidback Beach Day
In Roatán, we kept it simple with a visit to a local beach. Sometimes the best moments are the most relaxed:
- A chance to feel the sand between your toes
- Swim, sunbathe or just enjoy a cocktail looking out over the sea
Again, docking directly meant no tender, so it was all very straightforward and stress‑free.
Fun for All Ages Onboard
One of the things that impressed me most about Norwegian Encore was how much there is to do, especially for families and those who are young at heart.
- Encore Speedway: a go‑kart track at sea, which is as fun as it sounds and a brilliant talking point for teenagers and adults alike.
- Galaxy Pavilion VR Room: an immersive virtual reality space that kept both children and grown‑ups entertained.
For days at sea, you can be as busy or as relaxed as you like:
- We loved spending time at Spice H2O, the adults‑only area at the back of the ship. It was calm, quiet and relaxing, with lush daybeds and a more tranquil atmosphere.
- There is also a main pool area with flumes and a play zone for children, plus bigger, more thrilling water slides for adults and older kids.
It felt like the ship genuinely catered for everyone: from little ones splashing about, to teens looking for action, to adults who just want a book, a lounger and a cocktail.

So… Am I A Cruiser Now?
I used to say “I’m not really a cruiser”, but as I stood on my balcony watching the sun dip into the Caribbean Sea on my 5th cruise, I realised I definitely need to rephrase that!
For me, this Western Caribbean itinerary on NCL Encore ticked all the boxes:
- A fun, laidback atmosphere
- Great dining and entertainment options
- Plenty of activities for all ages
- Beautiful ports of call with a balance of adventure and pure relaxation
It is a fantastic option for:
