Stepping aboard the NCL Encore in Miami, I knew I was in for something special - but nothing could quite prepare me for how inspiring, energising, and exceptional this cruise would be. Over seven magical nights we explored sun-drenched Caribbean gems, enjoyed unbeatable cuisine, and discovered why Norwegian Cruise Line is a world-class choice for both new and seasoned cruisers alike.
Welcome Aboard: Day 1 in Miami
From the moment I arrived at the Miami port, the energy was electric. Our first evening’s group dinner in the Manhattan Restaurant set the tone: elegant, welcoming, and with menus to rival city hotspots. Norwegian’s friendly crew made every moment feel seamless and personal.
Days at Sea: Enrich, Indulge, Entertain
On our first full day, we had a Seminar at Sea where our lovely host provided us with in-depth knowledge about everything NCL. I spent my time exploring all parts of the ship and treated myself to some spa time which really set me up for the week! Free evenings let us sample dining across Encore’s fabulous venues - my first visit to the speciality dining restaurants was to Onda by Scarpetta which quickly became a favourite for its Italian flair.
Norwegian’s award-winning entertainment is legendary. “The Choir of Man” in the Encore Theatre had us up on our feet and will live long in my memory - Broadway truly does come to sea.
Discovering the Caribbean: Belize, Honduras, Grand Cayman
This itinerary delivered pure “wow” moments at every port:
- Harvest Caye, Belize: Pedal boarding with manatees was a once-in-a-lifetime wildlife encounter, followed by dinner at the Texas Smokehouse, where the company and smoky flavours were equally memorable.
- Roatan, Honduras: Adventuring off-road on jungle ATVs and relaxing on the beach by day, capped with a private Speedway session—Norwegian Encore is packed with fun for every age and pace.
- Grand Cayman: Snorkelling rainbow reefs and meeting playful stingrays, followed by a futuristic virtual reality experience in the Galaxy Pavilion, proved Encore is as innovative as she is elegant.
One of the true highlights of my journey was our stop at Harvest Caye, Norwegian Cruise Line’s stunning private island in southern Belize. From the moment we arrived, the sense of exclusivity and pristine natural beauty was captivating.
With its white-sand beaches, swaying palms, and crystal-clear turquoise waters, Harvest Caye offers the perfect blend of relaxation and adventure - just for Norwegian guests.
The island itself is a paradise playground: you can unwind in a luxurious beachfront cabana, cool off in the enormous resort-style pool, or explore nature trails teeming with local wildlife. Adventurers can try ziplining over the island, water sports from the marina, or simply savour laid-back moments at one of the beach bars.
After a day of sun-soaked discoveries, we regrouped for a sociable dinner at the Texas Smokehouse back onboard - still buzzing from the natural wonders and relaxed luxury that only a private island escape can deliver.

- District Brew House: Our Beer Tasting Session became a firm favourite, introducing us to craft brews from around the world - an entertaining way to unwind with friends old and new.
- Encore Speedway: For the ultimate adrenaline rush, I took to the multi-level race track at sea. Racing around hairpin bends with the ocean as your backdrop is a once-in-a-lifetime thrill! I think I might start a side career in F1 driving...
- Galaxy Pavilion : Norwegian’s virtual reality wonderland was a highlight - imagine free-roaming VR adventures, racing simulators, and an array of cutting-edge games, all in one futuristic playground.
- Escape Room: If you love a challenge, gather your travel companions and test your teamwork in the high-tech onboard Escape Room. It’s brain-teasing, energising fun and the perfect way to bond.
Miami Finale
Returning to Miami, the adventure continued: Miami’s Art Deco District, Wynwood, and a Culinary Tour around Little Havana gave us a delicious immersion into local culture before heading home.
